The Audarya vineyard is located in the south of Sardinia. Siblings Nicoletta and Salvatore Pala manage the business today, but they are the third generation of the family to cultivate wine in this place. They make wines that are connected to the territory, with native grapes, but at the same time modern, for a spiritually minded and curious public. Audarya looks to tradition, with a new look.

Audarya means "Nobility of the souls", but the word is rooted in an ancient oriental language.

Sparkling winemaking method: Charmat method.

Tasting notes:
Colour: Straw yellow with persistent perlage
Nose: Fragrant, with notes of pear, citrus and essential herbs
Palate: Fresh, savory and persistent

Food Matches: Excellent as an aperitif and paired with fish dishes

Storage: Away from light. Serving temperature 6-8°C.

Hint: Try cooling it in a bucket of ice and see what happens on the label!

Colour: Straw yellow
Nose: Fragrant with aromatic nuances of essential herbs
Palate: Rich flavour with a pleasant softness
 

Food Matches: Fregola (small balls of semolina) and sardininan little gnocchi (malloreddus) cooked at the Carlortina way (pesto, basil, olive oil, cherry tomatoes), semi cured cheeses. Sea bass with vernaccia wine, capon with potatoes and fresh cherry tomatoes.

Nose: Intense wine which noticeably exalts the natural aromas of the grape variety.

Tasting notes:
Colour: Intense ruby red
Nose: slightly spicy with hints of very ripe red fruit
Palate: well-structured, warm and persistent

 

Food Matches: cured meats, first courses with tasty condiments, Sardinian Pecorino cheese with medium or long matured. Roast pig or lamb with myrtle and juniper berries, beef with sauce and wine.

Food Matches: second courses of game and red meat, roasts, mature cheeses. Wonderful for meditation.

Colour: light pink
Nose: Fruity with a note of citrus and tropical fruits
Palate: Fresh with high mineral sensations

 

Food Matches: The rosé for its characteristics matches a wide variety of dishes, form the carpaccio of kingfish with a brunoise of vegetables and green apple, to the lobster.

Rosato

Tasting Notes:

Colour: intense golden yellow

Nose: dehydrated apricot, wildflower honey and Mediterranean maquis

Palate: sweet and well-balanced, with a natural freshness due to the overripe.

 

Food Matches: Almond based sweets, pine nut and raisin.

Nose: salt rock scents, citrus and white peaches

Palate: the sip is savory and with a slight almond finish, in a centered and enjoyable context.
